VINIFICATION
80% rossese and 20% syrah (from Cervo), blended prior to fermentation.
After de-stemming, the grapes are moved to a vat where the temperature is kept at 6-8° C, using a heat exchanger. 48 hours of pre-fermentative cold maceration follows, then the temperature is raised to about 18° C and fermentation is started by ambient yeasts, which lasts a further 72 hours.
The wine is then de-vatted to used tonneaux of various woods for micro-aeration, maturation and malolactic fermentation.
At this point it is returned to steel vats, undergoes light filtration and is bottled.
Ambient yeasts. 5,000 bottles of IGT wine.
