40% grenache, 40% mourvedre (from Cervo), 20% barbarossa (from Varigotti).
Grape temperature is lowered to 5°C in cold storage. After de-stemming, the press is filled and the fruit is macerated for about 12 hours. Pressing is followed by off-the-skins fermentation and vinification; after the first racking the wine spends 30-45 days in used acacia/cherry/oak tonneaux for a brief lees stirring and controlled aeration.
The wine is then moved to steel for cross-flow filtration, microfiltration and bottling. Cultured yeasts. 2,000 bottles of table wine.
