The first three days of fermentation are in steel, on the skins with natural yeasts.
This is followed by slow wood fermentation in acacia tonneaux.
The next stage is ageing, also in acacia barrels with lees stirring for nine months, then two months in steel before being bottled without filtering, followed by bottle ageing for four months.
